BBQ Loaded Baked Potato

BBQ Loaded Baked Potato

For dinner tonight we made a loaded BBQ baked potato. we have added traditional chili two I baked potatoes before and it was delicious but we wanted something a little different so this mainframe nice change. It was delicious!
In a crockpot added:
1 can of kidney beans drained
1 can of great Northern white beans drained
1 can diced tomatoes 
2 cups of frozen corn (you can use canned that make sure you drain)
3 tablespoons of barbecue sauce
1 tablespoon of A1
1/2 cup water
Garlic powder
Onion powder
Chopped onions and mushrooms to desired amount.
Cook on low for at least half the day.

Bake potato 45 minutes on 425°
The center open and the bbq beans
Top with: 
Sautéed mushrooms and onions
diced cherry tomatoes and cilantro and salt and pepper to taste:)

Quick Salad

This is a quick salad made from some leftovers. Takes just a few minutes.
* Romane Lettuce
* Chili beans from left over chili (pinto, kidney, black beans, corn)
* Olives
*Cilantro
* Fresh mashed avocado

Quick, simple, and delicious.

Blueberry, Orange, Grapefruit, and Walnut Oatmeal

Sorry for the not so great picture but...

I have to share this yummy breakfast idea.

Cook your oatmeal as desired and then...
* Add desired amount of frozen organic blueberries (I buy the big bag at costco)
* Raw walnuts
* Slice a piece of orange and grapefruit and squeeze the juices over your oatmeal
*a drizzle of Agave or Honey
You could also sprinkle a little raw or brown sugar over the top if you want a little crunchy texture.

This oatmeal is not only delicious, but it added some extra health benefits to your breakfast. 
Oatmeal  is a great source of fiber, high in protein, and low in fat.
 It helps protect agains heart disease, and reduce bad cholesterol.
With superfood blueberries they help reduce the risk of colon cancer, help our brains maintain, prevent disease and more. 
 grapefruit that helps fight fat and cancer
 oranges which are high in Vitamin C and help fight disease, help skin, and alkaline our bodies. 

So this is a breakfast packed full of healthy benefits. 
It's is making my mouth water writing about it again:)

Thanksgiving 1/2 Marathon

So I ran my first half marathon on Thanksgiving day. My awesome hubby and wonderful mom and brother helped prepare and care for the kids so that I can run. It was such a great experience and I loved every minute of it.

It has been my desire to run a Marathon, and I kept saying after I had "all" of our babies I would do it. Well, our fourth is here and is one, we are almost weened, and so I got an itch to do it… now. Yep.

I had some great tips given to me from my amazing Mrs. Kollene and was so inspired by her I decided to start training with 27 days to go before my first full Marathon. 

So, I signed up to run in my first half in thanksgiving:) as my long run:) and then depending on how it went I would go ahead and pay for the full which would be two weeks later. 

To say it was fun may be putting it light. I had a blast! I met a group of awesome girls (7sisters) :) and at mile 5 we chatted the whole way to mile 13. I hardly notice I was almost done and then I climbed a small hill and looked toward the finish line and saw my hubby, kids, mom, and brother and wanted to cry, scream, yell, and sprint all at once:)! Just seeing their faces I felt like I could have ran another 13 at that point. It's amazing how their sweet faces and lives bless my soul! I am so thankful to God for them! 

So most of you by now think I am crazy, but I was doing a little training before I started this venture to a marathon. 

I had been doing insanity and started (running) training two weeks before the 1/2 marathon. I will share my schedule of training soon. I also juiced each day and tried to eat as healthy as possible two weeks before the race. The majority of my juices consisted of kale, carrots, cucumber, apple, and lemons. I also stay away from tea and fried food. Oh and of course drank water water water! In addition I tried to eat a banana a day to help with a good amount of potassium for fighting off cramps. 

My secret weapon is always PRAYER! God's strength is truly what gave me the endurance and grace to finish. He is so good to provide new friends along the way to distract me, to give me legs o run, lungs to breathe, eyes to see, and a family to celebrate with! What gifts each of those are! Truly! He is amazing! Thank you LORD!

 I am so blessed to have finished and so thankful for the opportunity! I look forward to running a full in the future. Please pray for me as I train for the full. 

Running a Marathon is a experience that you should at least try once :) Overall I would totally encourage you to get out and move! If your not a runner the 5K may be perfect because you can also walk it! You can really walk it or walk/run it! Get some friends together and start with a 5K! It's fun, your getting exercise, and its an opportunity to give to others too. As most races donate a portion of the proceeds to a good cause. 
 It was truly a great first experience!

Juice it up

This is what went in our juice this morning.... 
This gave our family of six all a good size glass for each body size. 
Lots of vitamin C and a great way to fight off the cold season.

 But most importantly bathe your family in prayer; that's the best defense we have!!!!
   
One bunch of Kale
1 cucumber 
3 oranges 
2 Apple (green and red)
1 lemon 
Approximately 15 carrots
This makes a great breakfast and can be delicious with a slice of toast! 
Get your greens!:)

Kale Costco salad and California buck eye lunch

  7 super salad pack from Costco
I added extra fresh kale and extra fresh brussels sprouts and fresh avocado.

In a separate bowl I took a half a piece of bread added my favorite salsa mixed it together and then put it in the center of the avocado and bake it at 350 for five minutes. I like to turn it to broil for the last minute to give the breadcrumbs a little crispy taste.

 This is so delicious and one of my favorite lunches or snacks. My kids love it too!

California Buckeyes


My creative hubby gave me the name for these....
CALIFORNIA BUCKEYES:
It's a little bit of me(cali) and him (ohio) together ;) 
This makes for a great snack or lunch. 
Cut avocado in half and remove the seed
In a bowl crumble bread crumbs
Add a table spoon or two of salsa until bread is covered, but not soggy
Spoon in salsa/bread mix to each side of the avocado top with salt or lime or both
Place in oven for 5 mins on 350 or enjoy it raw
It's delicious and healthy!
